Sweet & Spicy Bean & Einkorn Bake

This is one of my comfort meals that just warms me up in the winter. It makes about 7 - 8 cups so feel free to double!! Personally, I make my own Sweet & Spicy Vegetable Juice for this recipe


(below). I find it is a great way to use up veggies that are going to have to be tossed if they are not used up. FOR THIS RECIP >>> I generally just toss them in a blender versus my juicer & I keep the pulp in it and do not strain it. If I were making it for another recipe or just to drink, I would use my juicer and strain the pulp which I would then use in a soup. You can just grab the V8 if that works for you!!


When you use my juice recipe, you end up with ABOUT 3 cups of veggies per serving!!! GREAT way to up those veggies!!!


Sweet & Spicy Bean & Einkorn Bake

Serves 4 as a side dish or 2 for a meal


INGREDIENTS

  • 1 onion, chopped

  • 1 cup carrot, shredded

  • 1 cup celery, chopped

  • 1 cup einkorn berries

  • 2 cups cooked beans (pinto, navy, kidney ect)

  • 4 cups Sweet & Spicy Vegetable Juice (recipe below, or you can buy it)

  • 4 garlic cloves

  • 2 tablespoons mild chili powder


DIRECTIONS

  1. Preheat your oven to 425 degrees.

  2. Use a deep cast iron pan (or an oven proof pot that can also be used on the stovetop) and put over a medium heat on the stove.

  3. Once the pot is hot use a bit of oil and put the onions in and fry for about 5 minutes until they are soft.

  4. Add the carrots & celery and continue to cook for another 5 minutes, stirring often.

  5. Add the einkorn berries and the pinto beans and stir through for 2 minutes.

  6. Add the vegetable juice, garlic powder and chili powder and stir to make sure everything is well combined.

  7. Cover and put into the oven and cook for about 1 hour and 15 minutes. Keep checking it now and then to make sure it isn't going dry. It is done when the einkorn berries are tender and most of the juices are absorbed.

  8. Take out of the oven and dish out onto serving plates or bowls.

  9. You can top with cheese in the last 5 minutes.

  10. Serve.


 

Quick Sweet & Spicy Vegetable Juice

Makes 5 cups of juice (about)

Ingredients

  • 2 red apples, cut into wedges

  • 1 green apple, cut into wedges

  • 1 cup chopped hearts of romaine

  • 1 ½ cups mixed greens

  • ¾ cup chopped fresh chives

  • 5 – 7 large tomatoes, cut into wedges

  • ¾ fresh jalapeño, seeded – if you want more heat, keep the seeds. Less heat, skip or reduce.

  • 2 - 3 large red bell pepper, cut into eighths

  • 6 large stalks celery, trimmed

  • 4 large carrots, scrubbed.


Directions:

  1. Add everything to a juicer or a blender.

  2. Use a cheese cloth or a fine mesh strainer to strain it if you are drinking a glass,

  3. For the above recipe, I just add it with the pulp. MEASURE out the 4 - 5 cups you need for the recipe & enjoy the rest as a snack.
